
PlacekPolish Coffee Cake. (Pronounced "Plah-sek"). This delicious light cake is one of my family's Christmas and Easter traditions. This is a lightly sweet bread-like cake with a crumb topping. Delicious plain or with a pat of margarine and of course with hot coffee (or tea!). This recipe was converted by my mother, Fran Guminski. It was my paternal Great-Grandmother Jerzewski and then Grandmother’s (Charlotte Guminski) recipe that consisted of only “handfuls of this” and “…till it looks right”. Later in life, my mom refined the recipe to substitute Splenda Baking Blend® for regular sugar due to my father being diabetic. Due to numerous requests, my mother and I have developed several variations of the recipe for different quantities. Follow the links below for the quantity that suits your needs.
