Pecan Crispies

One of Mom Gold's Excellent Recipes

1 cup shortening
½ cup Splenda Sugar Blend
1 egg well beaten
1 cup chopped pecans
1 tsp vanilla
2 cup all purpose flour
3 tsp baking powder
1 tsp salt (optional)
Colored sugar crystals

Cream sugar, shortening, & beaten egg.
Blend in flour, nuts & vanilla.
Roll into log like rolls & wrap in wax paper.
Put in refrigerator and chill at least one hour.
While log is still cold, roll into colored sugar crystals before slicing.
Cut log into ¼” slices in & bake in 350° oven for 12-15 minutes or until golden brown.

Let cool on pan for a few minutes before transferring to a cooling rack. This will avoid breakage.
