Banana Bread

(Thanks to my Texan neighbor Gracie for this delicious recipe)

½ cup butter flavored shortening
½ cup Splenda Sugar Blend
¼ cup milk
2 eggs or Egg Beaters
1-1 ½ cups mashed, ripe bananas
1 tsp lemon juice
2 cups sifted all purpose flour
3 tsp baking powder
½ tsp salt (optional)
1 cut nutmeats, chopped (pecans or walnuts)

Cream shortening and Splenda Sugar Blend together.
Beat eggs with a fork till light in a small bowl.
Add to shortening mixture.

Combine mashed bananas & lemon juice.
Blend in with creamed mixture.

Sift dry ingredients and mix quickly into the banana mixture.
Add nuts and mix till all blended.

Bake in a greased loaf pan at 350° for 50-60 minutes. Check for doneness and bake longer if needed.
